Halietza began the way every mole begins — in a family kitchen, with a recipe passed down by hand. Our founder's mother grew up in Oaxaca, where the seven legendary moles aren't a menu, they're a way of belonging at the table.

The mission
Authentic mole has been gatekept by geography. The right chiles, the right cacao, the hours over a metate. Most people never get to taste the real thing — and the few who try usually settle for a glossy supermarket version made far from where mole was born.
